Kulfi is heavier than ice cream, and it punishes a weak teela.
Malai and khoya kulfi set dense, and they grip the mould. When you pull, the whole load goes through the stick — and a teela that is too thin, or cut across the grain, or still carrying moisture, snaps in the customer's hand or stays behind in the matka. That is why kulfi teela is cut thicker than an ice cream stick: 2.5 mm rather than 2 mm, and 3 mm on the 9 inch industrial size.
We cut the full range from 5 to 9 inches, in a true flat rectangular section rather than a rounded one, because that is what holds in a dense set. The 6 inch is the default across Punjab and the size most shops should start with; go to 7 or 8 inch for taller moulds, and to the 9 inch where the moulds are heavy and the operation is bulk. Which kulfi teela size should I use?
The 6 inch suits most standard moulds and is the size most of Punjab runs. Move up to 7 or 8 inch if your mould is tall enough that a 6 inch sinks too far in, and to the 9 inch industrial teela if the moulds are heavy and you are freezing in bulk.
My teelas keep breaking on de-moulding. What is wrong?
Usually thickness or moisture. A teela cut at 2 mm to save wood will not hold a dense malai kulfi, and wood that was not dried properly before cutting stays weak whatever its dimensions. Ours are 2.5 mm on the standard sizes, 3 mm on the 9 inch, and kiln-dried before cutting.
Do you sell by the kilo or by the piece?
We quote per piece and per thousand so the comparison is honest, and pack in bora. Each size page lists an approximate pieces-per-kg figure — worth checking against anyone quoting you a rate per kg.
Can I buy a small quantity to try first?
Yes. Take a sample bora, run it for a week, and order properly once you know it holds.
