A tongue depressor is a single-use instrument, and it is judged on its edges.
Everything that matters about a depressor happens at the perimeter. A square-cut edge catches; a rough one splinters; either is unacceptable in a patient's mouth and both are obvious the moment a clinician picks one up. So the edges are bevelled and the faces sanded, and the wood is dried before cutting so it does not raise grain afterwards. We do not describe these as food-grade — they are a medical item and they are made to that standard.
Three sizes cover clinical practice: the 6 inch by three-quarter inch adult depressor, which is the international standard and the bulk of what moves; the 5.5 inch junior for paediatric use; and the 4.5 inch infant size. They are supplied non-sterile in bulk, which is how hospitals and distributors normally buy them. Sterile individual wrapping is available on a contract basis.
